[DANSK] Keeping it simple...

Back from vacationing in the north of Jylland, having enjoyed plenty of smoked salmon with creamed spinach, brunsviger, beer and local butter. I even went bathing in Vesterhavet (The North Sea) and loved it, wave-crushing and all! And while I didn't have this on this specific vacation (My Dad did) I do love it. New potatoes, boiled to perfection and cooled. Thick slices on rye bread, mayo (homemade if you have the time) and loads and loads of chives. Salt and pepper. Smørrebrød for ya.

Welcome back!

Wave-crushing, eh? Interesting.

If I swap out the rye for something else, I'm so on board. I just have issues with rye bread...

I wouldn't swap the rye bread for anything - my only issue is that I can't have enough of it (but it must be from my homeland, nothing else comes close to it, so I always have a steady supply in my freezer:)
I learnt to enjoy cooked sliced potatoes on my rye bread when living in Svendborg in 91-92. Still like it a lot many years on, though I managed to raise an eyebrow or two back home in the beginning.
That sounds like a delicious sandwich, though I'd swap mayonnaise for sour cream (or mix the two).

Stephanie - I don't know if it was more the waves crushing me - you had to keep on your toes to not have them roll away with your bathing suit, that's for sure!

Santos - If I ever do a smørrebrøds-shop, I'll call it carb heaven - but I'll make something for you without the carbs, 'kay?

Pille - mmm, a mix of sour cream and mayo...

Violet - oh yes, homemade mayo - one of my faves!
